French Onion Soup

Ingredients

  • 4 tbsp olive oil
  • 2 tbsp butter
  • 1 kg onions ($1)
  • 1 tsp salt
  • 1/2 tsp sugar
  • 3 tbsp flour
  • 1.5 L beef stock ($3)
  • 1 cup white wine
  • 1/2 tsp sage
  • 1 bay leaf

Method

  1. Heat olive oil and butter. Stir in onions and coat with oil. Cover and cook for 20 min.
  2. Add sugar and salt. Cook until caramelised.
  3. Stir in flour bit by bit.
  4. Add beef broth and simmer. Turn off when boiling.
  5. Serve with bread and cheese if desired.

Feedback

Hearty meal which doesn’t get old. Lots of goodness. Gets better with as you reheat it. Super cheap.
